The production process of an ice cream parlour consists of several stages, each with different and specific temperature and humidity requirements:

  • storage of raw materials at positive or negative temperatures
  • ice cream whipping with need for chilled water for cooling the ice cream machine and pasteuriser
  • ice cream hardening to block the loss of volume and keep it dry, preserving quality
  • ice cream freezing at -20°C for storage
  • preservation of the finished product in cabinets and negative temperature cold rooms

  • heat recovery: condensation heat, usually discarded, can be used to heat water for various purposes (domestic hot water, heating, dishwasher, etc.).
  • sanitisation: it is crucial for the ambient air treatment devices to ensure an ideal level of sanitisation, in order to prevent bacterial contamination of foodstuffs
